Description about Kothimbir Vadi:-

Hello guys welcome back, today we are going to learn about a very famous and very delicious Maharashtrian recipe, namely is Kothimbir vadi which is made using the fresh coriander leaves, besan and basic Indian spices usually served with a cup of tea and tomato ketchup. 

The other Maharashtrian name of the coriander leaves is “Kothimbir” it plays the key role in this recipe. First, the batter is prepared by mixing the coriander leaves, gram flour and spices with water and then the batter is steam cooked and sliced into small pieces to make vadis, and in the last, the vadis are either shallow fried in a pan or deep fried until crispy. So guys lets start.......

Required items for cooking Kothimbir Vadi:

1.    4 cups Fresh chopped Coriander Leaves.
2.    2 cup Besan.
3.    1 teaspoon chopped Ginger.
4.    1teaspoon chopped Garlic.
5.    2 Green Chili, chopped.
6.    2 tablespoon Sesame Seeds.
7.    4 tablespoons Roasted Peanuts Powder.
8.    1 teaspoon Red Chili Powder.
9.    2 teaspoon Cumin-Coriander Powder.
10.    1/2 teaspoon Turmeric Powder.
11.    1/4 teaspoon Baking Soda.
12.    Salt to taste
13.    1/2 cup Water.
14.    Oil, for shallow frying.

Time taken for cooking Kothimbir Vadi:

1.    Preparation Time: 15 minutes
2.    Cooking Time: 30 minutes

1.    Serves: 6 servings

Procedure to cooking Kothimbir Vadi:

First of all grind 1 teaspoon ginger, 1 teaspoon garlic and 2 green chili together in the small jar of a grinder until a medium coarse paste. Now wash the coriander leaves and drain excess water from the leaves and remove any wilted or discolored cilantro leaves. 

Afterthat spread them over kitchen towel or paper towel to remove excess moisture also. Now chop them and add to a large bowl. Now add 2 cups besan. Afterthat add 2 tablespoon sesame seeds, 4 tablespoons roasted peanuts powder, 1 teaspoon red chili powder, 2 teaspoon cumin-coriander powder, 1/2 teaspoon turmeric powder, 1/4 teaspoon baking soda and salt and make a mixture of all above things by mixing them well. 

Afterthat add ginger-garlic-chili paste which you have already make at the first. Afterthat add little water at a time  as needed and mix well to make thick batter. Now pour 1 glasses of water in a steamer or a broad and deep vessel and heat it over medium flame, after getting heat place a stand in the steamer.

Grease a tray with oil and place it over the stand. Spread the batter in the greased tray. Cover it with a lid and steam it for 20-25 minutes over medium flame. After 20 minutes, remove the lid and check it by inserting a toothpick or a knife in the center and if it comes out clean then it is cooked. If it is not, then steam cook it for another 5 minutes. Now remove the tray from the steamer and let it cool at room temperature for 10-15 minutes. 

Run a knife on the sides of the tray and invert it on a plate so the steamed batter will come out easily. When it cools completely, then after cut into small pieces. Now heat 6-8 tablespoons oil in a non-stick pan over medium flame. Place 10-12 pieces in a pan and shallow fry them until bottom surface turns light golden brown. Flip them carefully and shallow fry another side until light golden brown. 

Afterthat remove them using a slotted spoon on the paper towel in a plate. Shallow fry remaining vadis. Finally Kothimbir vadis are ready for serving.
