Hello friends welcome back at Fast-Food-Counter, The Biryani is a traditional dish which has comes from Hyderabad. So today we cook the Vegetable Biryani in a traditional Hyderabadi Dum Biryani.  The Vegetable Biryani is loved by the most and many common peoples, because it is so testy, delicious  and easy to cook and also less expensive. 


But the Vegetable Biryani is prepared in 3 basic steps the first one is cooking basmati rice with aromatic whole spices, second one is cooking vegetables with various Indian masala or spice powders, whole spices and curd, and the last one is cooking layered cooked rice, cooked vegetables and fried onion in a container using Dum method. 

In Dum cooking method food is slow-cooked in a sealed container, which allows food to slow-cook in its own steam and juices making it highly flavorful and aromatic. In the first glance, you may feel that this Vegetable Biryani recipe requires so many ingredients but don’t, it will take only 40 minutes to cook and flavor, aroma and texture of final dish will blow your mind and taste buds away making it worthwhile to try this recipe. So friends now we are going to learn about how to cook Vegetable Biryani, let's starts........

Required items to prepare Vegetable Biryani:

1.    Items required to prepare Rice for Vegetable Biryani

        (a)    2 cup Basmati Rice

        (b)    4 Green Cardamoms

        (c)    2 Black Cardamom

        (d)    4 Cloves

        (e)    2 small piece of Cinnamon

        (f)    2 small Bay Leaf

        (g)    Salt according to taste


2.    Items required to prepare Gravy Vegetable Biryani:

        (a)    2 small chopped Potato

        (b)    1 cup chopped Cauliflower

        (c)    1/2 cup chopped Carrot

        (d)    1/2 cup chopped French Beans

        (e)    1/2 cup Green Peas

        (f)     2 sliced medium Onion


        (g)    2-3 Green Chilies

        (h)    2 teaspoon Ginger-Garlic Paste

        (i)     5-6 Black Peppercorns

        (j)     2 Green Cardamom

        (k)    1 teaspoon Cumin Seeds

        (l)     1 teaspoon Red Chili Powder

        (m)    1/4 teaspoon Turmeric Powder

        (n)    2 teaspoon Cumin-Coriander Powder


        (o)    1/2 teaspoon Garam Masala Powder

        (p)    1 cup Curd 

        (q)    4 tablespoons Coriander Leaves

        (r)    6 tablespoons Oil

        (s)    Salt according to taste


3.    Items required to assembling the Vegetable Biryani:

        (a)    1/2 cup Fried Onion

        (b)    2 tablespoons Ghee

        (c)    14-18 Saffron Strands, soaked in 2 tablespoon Warm Milk

        (d)    14-18 chopped Mint Leaves

        (e)    4 tablespoons Coriander Leaves


4.     Tips to prepare biryani in lowest possible time.

        (a)    First soak the rice in water.

        (b)    Then prepare the gravy.

        (c)    When gravy is half cooked, start to cook the rice.

        (d)    Assemble rice and gravy and cook again.


Time taken to prepare Vegetable Biryani:

1.    Preparation Time: 20 minutes

2.    Cooking Time: 40 minutes

Procedure to prepare gravy for Vegetable Biryani:

1. Procedure for making gravy for Vegetable Biryani:

First of all cut all the vegetables as per required items but remember one thing do not cut the vegetables into very small pieces now soak 14-18 saffron strands in 2 tablespoon warm milk. Now heat-up  6 -tablespoons oil in a fry pan or a kadahi on medium flame. 

After oil getting hot add 2 sliced onion, 2-3 green chilies, 2 teaspoon ginger-garlic paste, 7-8 black peppercorns, 2-green cardamom and 1 teaspoon cumin seeds. Continues stir and fry them until the color of onion starts to turn into light brown. 


Now add 2 chopped potato, 1 cup chopped cauliflower and 1/2 cup chopped carrot and stir continues to fry for 5-6 minutes. Afterthat add 1/2 cup chopped French beans, 1/2 cup green peas and salt according to test and mix properly all that things and cook covered until vegetables are almost cooked. This process will take around 7-10 minutes. 

Now stir occasionally in between to prevent sticking. Now add 1 teaspoon red chili powder, 1/4 teaspoon turmeric powder, 2 teaspoon cumin-coriander powder and 1/2 teaspoon garam masala powder and stir continues and cook for 2 minutes. 

Afterthat add 1 cup beaten curd and 4 tablespoons chopped coriander leaves and mix properly and cook for 2 minutes. Now switch off the flame and keep the gravy covered until rice is cooked. 


2.    Procedure for Cooking Rice for Vegetable Biryani:

First of all wash 2 cup rice in water for 4-5 times and then soak in water for 15-20 minutes. After soaking drain water and keep rice aside. Now pour 5-6 cups water in a deep pan or a pot and bring it to boil on medium flame. When it comes to boil, add drained rice, 4 green cardamoms, 2 black cardamom, 2 cloves, 2 small piece of cinnamon, 2 small bay leaf and salt according to test. 

Now boil all the things around 10-12 minutes. Be insure that do not over cook the rice because they will be cooked again when we give them final touch. After cooking rice transfer to a colander and drain excess water. 

3.    Procedure to assembling the Vegetable Biryani:

We will make four layers in biryani – two rice layers and two gravy layers. If you are preparing it in larger quantity, make more layers. Make sure that the vessel or pan has a flat heavy based bottom deep enough to have 4 layers and can be sealed with lid or cover afterthat add half of the gravy in a pan into which you want to cook the biryani and spread it evenly. 

Now add half of the rice over gravy and spread evenly and sprinkle half of the saffron mixture over it. Evenly sprinkle 1/4 cup fried onion, 2-tablespoon chopped coriander leaves and 7-8 chopped mint leaves over it. 


Evenly spread remaining gravy over it to make a third layer. Afterthat evenly spread remaining rice over it and sprinkle remaining saffron mixture, fried onion, coriander leaves and mint leaves over it. Pour 2-tablespoon or as your required ghee on sides of rice and cover the vessel or pan with a tight fitting lid. 

If you do not have tight fitting lid then you can use wheat flour dough to seal the edges. Now heat the tawa on low flame, put vessel over it and cook for 15-18 minutes to get Dum effect and after about 15 minutes, switch off the flame. Finally the Vegetable Biryani is ready to serve, remove the lid and transfer layered Vegetable Biryani to the serving plate.
