Today we are bring a Punjabi dish recipe for you namely Paneer kofta. The Paneer kofta is commonly consumed in North India and mostly in Punjab that's why  we called classic Punjabi recipe of North Indian cuisine.

The Paneer kofta basically made into two parts, first one is make kofta with paneer and second one is make tomato-based gravy. You can use it as a snacks or also serve it with as a curry with gravy for sumptuous meal. So guys today we are going to learn about how to prepare or cook delicious Paneer kofta, let's start......

Required items to prepare Paneer Kofta:

1.    Items for Kofta:

        (a)    400 gms grated Paneer 

        (b)    4 medium boiled, peeled and grated Potatoes

        (c)    2 chopped Green Chili

        (d)    1 teaspoon grated Ginger

        (e)    1 teaspoon Lemon Juice

        (f)    4 tablespoons chopped Coriander Leaves

        (g)    3 tablespoons Corn Flour

        (h)    12-15 chopped Cashew nuts

        (i)    Salt according to taste

        (j)    Oil for deep frying

2.    Items for Gravy:

        (a)    6 medium Tomatoes

        (b)    4 tablespoons peace of Cashew nuts, soaked in water for 20 minutes

        (c)    4 teaspoons crushed Garlic-Ginger

        (d)    2 chopped Green Chili

        (e)    2 medium chopped Onion

        (f)     1 teaspoon Cumin Seeds

        (g)    4 Cloves

        (h)    1 inch piece of Cinnamon Stick

        (i)     1 teaspoon Turmeric Powder

        (j)     1 teaspoon Red Chili Powder

        (k)    1/2 teaspoon Garam Masala Powder

        (l)     3 teaspoons Coriander Powder

        (m)    1 teaspoon Sugar

        (m)    1 teaspoon Kasturi Methi 

        (o)     4 tablespoons Oil

        (p)     1 cup Water

        (q)     Salt according to taste

Time taken to prepare Paneer Kofta:

1.    Preparation Time: 20 minutes

2.    Cooking Time: 40 minutes

Serving:

1.    8 serving

Procedure to prepare Paneer Kofta:

1.      Procedure to prepare Kofta:

First of all collect grated paneer, grated potatoes, corn flour, green chili, ginger, lemon juice, coriander leaves and salt in a large bowl or a container and mix them all properly and make a smooth mixture.

Now apply some grease on your palms with oil and divide mixture into 12-15 equal portions. Give each portion a shape of ball or squire as you like most. Now pick one ball and press a little between your palms and flatten it like Pattie and put 3-4 pieces of cashew nuts in the center.

 

Wrap them in from all sides and give round shape of ball. Follow the same procedure with the remaining stuffed kofta balls. Give some heat to oil in a frying pan with medium flame. When it is medium hot, slide in 3-4 stuffed balls from the edge of frying pan and deep-fry  on medium flame until the color turns golden brown and crisp.

But before putting into the oil make sure that oil is hot enough otherwise it may break and split open in the oil. After frying drain them and transfer them to a plate. Also deep fry remaining stuffed balls.

2.     Procedure to prepare the Tomato based Gravy:

First of all blanch tomatoes and make tomato puree and grind soaked cashew nuts with 4 tablespoons water and make a paste. Now give some heat to oil in a pan or kadahi on medium flame. After oil is getting hot add cumin seeds, when they begin to crackle, add cloves and cinnamon. Sauté for approx. 1 minute afterthat add crushed garlic-ginger and sauté for 20-30 seconds.

 

Now add chopped green chili and onion, sauté until the color of onion turns light brown for 3-4 minutes. Now add tomato puree. Sauté until oil starts to separate from the all mixture, it will take time approx. 4-5 minutes. Now add cashew nut paste, turmeric powder, red chili powder, coriander powder, garam masala powder, sugar and salt according to the test.

Now stir it continue and cook for 1-2 minute. And finally add some Kasturi Methi and 1 cup water. Cook the gravy for 5-6 minutes. Now add prepared stuffed kofta balls and mix properly in a manner and switch off the flame. Now the Paneer Kofta is ready to serve, transfer paneer kofta curry to a serving bowl and garnish with grated paneer and enjoy it.
