Hello guys today we are bring a new North Indian recipe for you namely Lachha Paratha. The Lachha paratha is a most delicious, and yummy breakfast food which is cuisine of North India. The Lachha Paratha is a favorite variety of the category of the Paratha's.

For preparing Lachha Paratha , a multi layered shallow fried north Indian flat bread, is an epitome of cooking art which tells us how one can make delicious and tempting food from common unassuming ingredients by just deploying a new technique in its preparation. The same layered paratha is also popular as the name of Kerala paratha in Malabar region of Kerala. 

However today we are going to learn about the cooking of layered paratha or Lachha Paratha, so let's start....

Required Items to prepare Lachha Paratha:

1.    3 cup of Maida (2 for dough and 1 for dusting) 

2.    Warm Water for kneading

3.    2 tablespoon and for shallow frying Oil or Ghee

4.    Salt according to test

Time taken to prepare Lachha Paratha:

1.    Preparation Time: 30 minutes

2.    Cooking Time: 25 minutes

Procedure to prepare Lachha Paratha:

First of all take 2 cup of Maida, 2 tablespoon oil and salt according to test in a large bowl. Knead smooth dough by mixing all ingredients and adding warm water in small incremental amounts. Now addition of water in small quantities as required will prevent you from adding too much water to bind dough.

But remember one thing the dough should be soft as per chapati dough. Now make greasy surface of dough with 1 teaspoon oil, cover it with clean muslin cloth and leave it to set at room temperature for 25 minutes. Divide dough into 8 equal chunks and turn them shape like a ball. 

Now take one dough ball, flatten it like Pattie by pressing between your palms of against rolling board and coat it with dry wheat flour. Afterthat roll out dough ball in a circular shape or make it as thin as possible. Now spread 1 teaspoon ghee or oil evenly over entire surface using brush or your hand and sprinkle 2 teaspoon dry wheat flour over it.

Now hold approx 1/2 inch wide strip with your first two fingers and thumb from the top edge of rolled raw paratha, lift and fold backwards such that top edge remains on top. Now hold two ends of plaited strip and repeat lift and fold backwards process until entire rolled paratha is like a stack of folded plaits. 

Afterthat hold each ends of long stacked-plaited strip with your first two fingers and thumb. Lift the strip slowly away from rolling board and give a few mild gentle swings. This will stretch the strip a bit. Now Horizontally place elongated strip on a rolling board. Afterthat roll the raw paratha like a Swiss roll. Press and stick outer-end against roll’s immediate surface.

Follow the same process with the remaining rolls. Now take one roll and place it horizontally on rolling board. Coat it with dry wheat flour and roll it out gently without applying too much pressure and give it a round shape. 

Afterthat give take heat tawa for cooked paratha or griddle with medium flame. Place raw Lachha Paratha on a hot tava. When you found some tiny bubbles rise on the surface, flip it on the hot tawa for cook other side. Spread 2 teaspoon oil over each side with spatula and cook until the color of both sides turns into golden-brown.

Now transfer Lachha Paratha into a plate and spread butter or ghee as per your preference. Now the same process follow with the remaining rolls. Now finally Soft, delicious and crispy parathas are ready to serve. Serve the Lachha Paratha with Mint Chutney, healthy palak paneer, any dry vegetables and coconut chutney.
