The Carrot Kheer is the yummy and also healthy desserts. But for this desserts we need fresh carrots for making it healthy, because the carrot have multiple vitamins and proteins. The use of ghee and cardamom powder adds a subtle taste and flavor while the use of condensed milk reduces the cooking time and adds a creamy texture. So guys today we are going to learn about Carrot Kheer, lets start........
Required Items for Carrot Kheer:
1. 4 medium grated Carrots
2. 4 tablespoons Ghee
3. 3 cups Milk
4. 4 tablespoons Condensed Milk

5. 10-12 Cashew Nuts, broken into two-three pieces
6. 10-14 Raisins
7. 2 tablespoon Sugar
8. 1/2 teaspoon Cardamom Powder
Time taken for cook Carrot Kheer:
1. Preparation Time: 15 minutes
2. Cooking Time: 20 minutes
Procedure to cook Carrot Kheer:
First of all peel and grate all the fresh and healthy carrots or coarsely grind them in a food processor. Now heat-up 4 tablespoons ghee in a non-stick or heavy bottomed pan or kadahi with medium flame. Now shallow fry cashew nuts and raisins separately, afterthat transfer them to a plate or a container.

Now add grated carrot and sauté over low flame for 5-6 minutes while stirring continuously afterthat add milk and mix properly and bring it to a boil on medium flame. When you found that it starts boiling, add condensed milk and mix properly in a manner.
Cook on low flame for approx 6-7 minutes, stir in between frequently. Now add sugar according to taste because the condensed milk is already sweet; hence add sugar only to get little higher sweetness. Cook until it starts to thicken or for around 6-7 minutes, stir continuously to avoid burning of carrot and milk.

Now add cardamom powder, mix properly and turn off the flame. Allow it to cool at room temperature. Now the Carrot Kheer is ready to serve, transfer it to serving bowls and garnish with cashew nuts and raisins.
